Tikhat-Mithachi puri  

Ingredients
 

2 cup wheat flour,
curry leaves chopped into fine pieces,
2 teaspoon red chili powder,
1 teaspoon turmeric powder,
1 teaspoon cumin powder,
1 teaspoon cardamom powder,
1 teaspoon asafoetida,
2 teaspoon hot oil,
salt to taste,
chopped coriander leaves
oil for frying
 
Method

1. Mix flour, turmeric powder, chili powder, cumin powder, curry leaves, asafoetida, coriander leaves, salt and hot oil.

2. Add some warm water to make a firm dough. Knead well. Cover with wet cloth and keep for about 15-20 minutes.

3. After 15 minutes, knead the dough again to make soft. Make small balls of 1/2 inch diameter and roll them like puris.

4. When oil is heated enough in the frying pan, slide the puri into it. Fry until golden brown from both the sides.

5. Serve hot puris with pickle, chutneys and/or yogurt.


Tip: Fry just 2-3 puris at a time. This will help make crisp puris as well as speed up the process of frying. Puris can be a good tiffin variety or picnic menu.
