Spicy Leftover Rice (Phodnicha Bhaat)  

Ingredients
 

Leftover white rice,
green chilies or red chili powder,
1 onion,
curry leaves,
coriander leaves.
1 teaspoon turmeric powder,
a pinch of asafoetida,
2 teaspoon mustard seeds,
salt to taste,
1 tbsp oil,

 
 
Method

1. Add salt to the leftover rice and remove lumps using a fork. Chop onions and chilies.

2. Heat oil in a pan. Add mustard seeds, asafoetida and turmeric powder. Add curry leaves and onion and fry till translucent.

3. Now add the rice and cover. Cook for 5 minutes.

4. Remove the lid and toss the rice gently. Garnish with coriander leaves.

Tip: For variation, use cumin seeds along with/instead of the mustard seeds.
