Semolina pancakes (Spicy)

Ingredients

For the batter:

4 tbspoon Semolina (Rava)
3 tbspoon yogurt (curd)
a pinch of bicarbonate of soda (sodium bicarbonate)
salt
For the topping:

1 green pepper (capsicum)
1 small tomato
2 tsp grated coconut
1 small onion
grated cheese (optional)
salt and chili powder
coriander leaves

Method


1. Mix yogurt, semolina, salt, soda and beat well.

2. Let rest for 15 mins.

3. Meanwhile chop onions, tomatoes and peppers finely. Combine chopped vegetables, coconut, salt and chili powder.

4. Grease and heat the griddle.

5. Pour about quarter cup of the batter at the center of the pan. Spread it a little bit.

6. Spread 2 tsp of the vegetable mixture over the top. Cover for a minute or until the bottom of the pancake is light brown. Flip over and let the other side cook.

7. Garnish with coriander leaves and cheese. Serve hot with butter, ghee and/or any chutney.
