Puffed puris, 2 cups thick yogurt/curd 1/4 cup sugar (If the yogurt is sweet, reduce the amount of sugar), very little amount of water, potatoes, chat masala thin sev (Indian fried noodles), chopped coriander leaves, salt to taste Sweet chutney 1/2 cup pulp of dates (soak dates in hot water for 1/2 an hour , remove seeds and grind them in a mixer, strain), 1/4 cup tamarind pulp, 1/4 cup jaggery or sugar, 1 teaspoon cumin seeds Grind together all these items. Spicy chutney 1 bunch coriander, 8-10 green chilies, 1 tsp cumin seeds, a pinch of salt. Grind together all these items. |

| Method 1. Boil potatoes and mash or chop them finely. Add salt and chat masala, mix. 2. Beat the yogurt with sugar and a pinch of salt with a wire whisk. Add water to get desired pouring consistency. 3. Prepare chutneys as directed above. Arrange puris in a plate. Fill each puri with 1 teaspoon mashed potato with the help of a spoon. Then add sweet dahi and drizzle the sweet and spicy chutneys over the puris. Garnish with sev and coriander leaves. Serve immediately. |
