Potato bhaaji (for fasting)  

Ingredients
 
4 medium sized potatoes,
3-4 nos. green chilies,
coriander leaves,
1 tsp cumin seeds,
1 tablespoom peanut powder,
salt and sugar to taste,
1 tablespoon ghee
 
 
Method

1. Wash and boil potatoes (for pressure cooking, 4 whistles should be enough). Peel and cut into small pieces. Rub some salt & sugar to them.

2. Chop green chilies & coriander leaves.

Heat ghee in a kadai or a pan. Add cumin seeds. As they splutter, add chilies. Then add chopped potatoes and stir well.

4. After stirred once, add peanut powder and mix. Cover and cook on a medium heat for 2 minutes.

5. Remove lid & stir the bhaaji and again cover for 2 minutes.

6. Garnish with coriander leaves while serving.

Variation: Try this recipe with raw potatoes.
