Gherkin Bhaaji (Tondlichi Bhaaji - Kaachrya)  

Ingredients
 
1/2 kilo gherkins,
1 teaspoon chili powder,
1 teaspoon turmeric powder,
salt to taste,
coriander leaves/cilantro.
1/2 teaspoon asafoetida,
2 teaspoon mustard seeds,
1 tablespoon oil,

 
 
Method

1. Wash gherkins. Make thin round slices, rinse them in salt water and set aside.

2. Heat oil in a pan. Add mustard seeds, asafoetida and turmeric powder. Add sliced ghekins and fry for sometime. Cover and let them turn tender.

5. Remove the lid and add salt, chili powder and stir. Toss bhaaji for sometime until crisp.

Garnish with cilantro.
